        commonplace in America and Australia, but still has
       room to gain devoted fans in China, India, and Central Asia. Technology like freeze-

       dried seafood may further democratize sushi’s availability. Whatever changes come,
       sushi’s  foundations  of  vinegared  rice,  fresh  fish,  and  handcrafted  technique  seem
       constant. The story of sushi is still unfolding, but some key ingredients endure time
       and geography. By honouring traditions while embracing innovations, sushi is sure to
       satisfy for centuries more.
