********************* Veggie Burrito Recipes ******************************
                
Though I don't have the exact recipe, I've made a great burrito with 
eggplant.  The general recipe is something like this:

1 Med. Eggplant
2 fresh, peeled tomatoes
1 8oz (I think) can mexacan style tomato sause
1 8oz can peeled tomatoes
3 cloves garlic
onion
jalapeneo peppers (if you like it hot..I don't add these)
anything else you want to add

Stir fry all of these until they are soft (5-10 min) then put them
in a small casserole dish (9x9?) and add 2-3 slices of whole wheat 
bread chopped in cubes and some cheddar cheese.  Bake this, covered,
for 25-30 minutes on 375(?).  Then spread it on flour tortillas and
enjoy!   

Jake & Lionel's Good Karma Curry Burrito


2 cups Brown Rice (raw) - 4 cups cooked
1 8 oz. can kernel Corn
1 8 oz. can Stewed Tomatoes
1 8 oz. can Pinto Beans
2 Tb. Curry (or more!)
1 clove Garlic, minced
4-5 Tortillas
1 large Onion, diced thin
Salsa

*  According to package directions, bring the rice to boil in a large pot. 
Open the cans of corn and stewed tomatoes.  Drain the juice and add to the
pot.  Boil together.

*  Once half of the moisture is cooked into the rice, add curry and garlic to
the mixture.  Keep stirring to distribute all of the ingredients evenly.  The
mixture should now be soft and very moist,

*   Lay out the tortilla shells.  In the center of each, place a heaping
spoonful of the rice mixture.  Top with onions and salsa.  Fold and roll up
with the tortilla.

